Merlinos' Belvedere Restaurant is Southern Colorado's Most Distinctive Family Restaurant. Our restaurant has been owned and operated by the Merlino family since it began in 1946. Our menu allows for a variety of choices including our Belvedere Special Italian salad with imported bleu cheese crumbles on the side, handmade pasta with our family secret recipe sauces, steaks, chicken and seafood, and delicious homemade desserts inspired by Chef di Cuisina Adam Merlino.

Although America is eating less beef, Merlinos' is compared with two other steak houses in the United States. They are located in Kansas City and Dallas. Merlinos' buys the top ten percent of the grade of Angus beef. We age and cut our steaks in our own meat shop. Our seafood comes from around the world.
